

Ingredients
2 1/2 cups seasoned croutons
1lb ground sausage
4 eggs
2 1/4 cups milk
1 small can cream of mushroom soup
1 10 ounce package of frozen chopped spinach, thawed and squeezed dry
2 cups shredded colby-jack cheese
Preparation
Spread croutons on the bottom of a greased 13x9 inch baking dish. Brown sausage stirring occasionally. Drain off grease. Spread over croutons. Whisk eggs and milk in a large bowl. Once blended, add soup, spinach and cheese. Mix well. Once blended, pour over sausage and croutons. Cover and refrigerate overnight. To cook the next day, preheat over to 325 degrees and bake 50 to 55 minutes or until set and lightly brown on top.
